I'm looking into getting into Triathlons. I found a 2006 Specialized Transition Bicycle Multi-Sport for about $700 with all components upgraded to Shimano 105s. Is this a good deal? Is this a good bike to start with?

Because it's a tri bike, the market is somewhat smaller for used bicycles. I'd say $500-600 is probably more of a fair price, but if the bike fits (this is a very big IF) then it may be the way to go. Unless you want to wait around forever checking craigslist until another one comes up. If you're serious about competing in triathlons, it's better to get a bike and start training now rather than later.

Suggested retail price for the new one is $1,200 so if it's a second-hand then it must be lower than that. Consider the condition also. As a seller, sell it at a reasonable price. As a buyer, you can ask for a discount.
